A Reflection:The final day of the year and decade

It's been an interesting 10 years to say the least full of changes and indecision and new paths. This past year has left us still in a place of uncertainty as we wait to hear on job applications that have been in place for many months. We are expecting a new addition to our family in just a couple short weeks. This year has also taught me to love my sewing machine even though I quite frequently have a hate relationship with it as well.

I am thankful for my husband and child. They give me great pleasure as well as the normal heartaches and aggravation. I'm sure I dish out just as much to them.
I am thankful for the roof over our heads even though the situation itself is less than ideal and quite frequently hard to accept from a lack of independence.
I am thankful for the work my husband has been able to acquire this past year and very thankful that we've had health insurance through his service to country.
I am thankful that I get to be a stay at home parent to my child even though it came with a few prices (the SAHM came as a result of numerous layoffs and childcare being an unaffordable option in today's economy).
I am thankful to have a fairly healthy pregnancy with our second child and am happily awaiting her arrival.
I am thankful for the friends we have who have been so supportive emotionally when we've needed it.
I am thankful for the wonderful support network I've made with some incredible women online who I can go to when I want to learn how to be even more eco-friendly or just budget conscious in general (they're who really got me to try knitting again, albeit slowly, so that I could help cut some of our diapering costs).
And most importantly I am thankful for the health of my family and myself and that we have made it through this past year relatively unscathed.

In the coming year I look forward to:

Job opportunities for my husband that he will enjoy and is looking forward to
Time spent with my husband and two children
Learning some more domestic skills that have fallen by the wayside but are slowly making a comeback (like canning which I look very forward to finally jarring up my own sauce)
Some sort of stability (if it can be called that for anyone) and getting back on our feet
And I look forward to getting the ocassional bit of quality time to myself so that I can continue sewing and maybe even pick up some of my old favorite books for a re-read.

These past few years have lead me on a journey that I never would have imagined for myself. I got married to my wonderful husband almost 6 years ago. We had our first child just a couple short years ago who is growing into a wonderfully imaginative person. My plans for serving my country didn't pan out originally but it's still not off the table in a year or two at which time I will look into my options again as it's still something that plays in the back of my mind.

I still haven't quite figured out the direction I'd like to take for finishing my college education but I'm slowly realizing that I'd still like to be able to do something that helps people. Originally that was going to law school and specializing in family law because I wanted to work with adoptions. It's still an option. My other option that has been coming to mind lately is becoming a chiropractor. I've not been injured but in terms of the daily wear and tear on my body of caring for and nursing a toddler it has been beneficial to be able to go so that I can be physically comfortable again. And even in my pregnancy it is proving to be a beneficial tool and something I am seriously considering as I'd like to see more people have the same comfort factor and option for pain relief.

This decade has taught me even more about loss as both my father and his sister, my aunt, passed away. They were two of my favorite people in the world and their passings came at crucial times in my life when I could have used their guidance and had to go about my life without it. And while I rarely show the emotions from their loss I will admit that I am deeply saddened but I know that they are onto bigger and better things. The loss of my father-in-law also occured barely more than a year into our marriage and that was also difficult to deal with and accept for the entire family. These people were all important to us and to who we've become and their presence will be missed especially as our family expands.

I am slowly learning as well that I can't plan everything much to my chagrin. I still try to and I am learning to try to go more with the flow. You'd think I'd have this down after over three decades, but nope. My wish for everyone in the coming year is to have health, a turnaround for the sadness in their lives, the ability and will to follow their dreams/heart even if they think no one is cheering for them and more happiness overall.

Ok, updates will be coming

Sorry I haven't posted in a while. I've been enjoying time with my husband and child the past couple weeks while were in job limbo.

Updates I have coming.... A tutorial on replacing the elastic in BumGenius diapers since the only one out there is on Diaper Swappers and I am sick of the viruses...Anyone else?

Putting a gusset onto the older style Happy Heiny Diapers. I want to test this out first before I post to see if it actually works. Plus, I'm converting one of these to snaps as well, so I'll post that as well.

And if I have any good recipes I'll obviously share those.

I'm in the midst of working on the diapers currently and trying to complete Christmas projects as well. So sit tight and stay tuned!

Tuna salad with egg

Ok, I didn't get to post this earlier. I "passed" my three hour glucose test that I took earlier however I still have to test/monitor myself because I was spilling it at the doctor's office. So, 3 numbers in and only my fasting one was normal so far. Hopefully my lunch number is good because I am starving beyond belief right now.


TUNA SALAD WITH EGG

1 small can of Albacore tuna drained well
3 hard boiled eggs chopped coarsely
1/2 large onion chopped fine
3 tbsp mayo (heaping, I just eyeball the wet ingredients and add more to suit my tastes... I know some people like their salads runnier, just fix to suit your tastes)
4 tbsp yellow mustard
1 tbsp spicy brown mustard
1/2 tsp garlic salt, pepper, dill weed, paprika, onion powder (again adjust to your tastes after giving it small taste once mixed)


Mix all ingredients together in a bowl. I usually mix them all together when they're cold because I don't like warm salad. Serve on whatever bread you like or even scoop some onto lettuce and tomato and eat. There should be about 3-4 servings here on regular size bread. And it keeps well in the fridge for about 3-4 days and tends to get better overnight because the flavors really meld together. I will try to post a pic later when I can grab the camera.

It's been a long week

I've been going non-stop with running errands. I took my one hour glucose test and failed so I have to do the three hour tomorrow. I don't foresee passing because I had Gestational Diabetes (henceforth to be known as GD) when I was pregnant last time. So, this puts me at a huge conundrum for the holidays because I always associate it like most others with great food. I am not baking this year though just because I'm getting too tired to stand over a hot oven. And if I do fail the test tomorrow I am at an even bigger problem in terms of eating. There's a problem if my body acts the same as last time I had it (most veggies made my numbers high so I avoided them as did most carbs which I also avoided). And with this pregnancy I am usually unable to tolerate meat and especially can't cook it. So, that will leave me with very few options of things to eat. I'm pretty much set to eggs and cheese and possibly tuna or non-offensive fish if I can keep that down. And lettuce. Lots and lots of lettuce. Not a great menu when you get down to it. Plus, starvation comes in leaps and bounds with that kind of diet. And no amount of extra calories can help the hunger go away with a protein laden diet. Note: I could never do Atkins or Sugar Busters or any of those kinds of diets that tell you all carbs are bad!


On another note of things going on I will be getting to sit down at the serger this week which I'm looking forward. And I've been able to do some productive things at home just in cleaning up the mess that gets made daily with a toddler. And Christmast gifts are in the starting stages of progress. I just need to sit down and think of some other gifts that will be appreciated for the rest of the family. The husband and toddler will enjoy everything I have planned I am sure. That is all for tonight I guess. I will try to post my tuna salad recipe tomorrow since I plan on making it for lunch. It may sound funny, but I promise that it is very good. Try it once. If you hate it you at least tried something new and if you like it then it can always be added into lunch rotations when you have a craving for it. :-) Good night all!

One of my versions of crock pot chili

Today is a throw it in the crock day. And it's vegetarian (probably vegan but I didn't look closely at the ingredients in the cans)

Here it is:

3/4 pound of dried kidney beans (these were already prepped and in the freezer ready to go. So, it's probably about 5 cups of beans prepped)
1 14 oz. can black beans
1 14 oz. can garbanzo beans
4 14 oz. cans zesty chili seasoned tomatoes
4 tbsp chili powder
2 tbsp cumin
2 tsp onion powder
1 large onion chopped
9 oz. green chilis
1/2 tsp. fresh ground black pepper, garlic salt, paprika

Throw it all in the crock pot and let simmer for 8 hours. Top with shredded cheddar and serve with brown rice or whatever floats your boat.

**Warning, if you're not going to be home during the day to stir this one add some olive oil (about 2 tbsp to the crock to help prevent some overcooking). I usually make this when I know I'm going to be home and able to stir throughout the day so the tomatoes don't burn. Nothing like burnt chili to turn you off!
And one more thing.... I go by smell usually when cooking so I know if it needs to be reseasoned. I also like my seasonings on the heavier side. If you don't adjust as needed. And since this is vegetarian this is one of those things that if you are giving an occasional stir throughout the day to also give a quick taste to make sure it suits your desires.

Another Egg Salad Variation

This is for 2 people.

I have a hard time choking down anything with mayonnaise in it without something to block the taste. It may look weird but the flavor is really good.

4 hard boiled eggs chopped to whatever size you like
1/4 small onion diced fine
1.5 TBSP mayo
1 tbsp yellow mustard
1 tsp brown mustard or a spicy mustard
salt and pepper to taste
1/8 tsp garlic powder and dill weed and paprika

Sometimes I add a 3 or 4 chopped fine green olives for a little more zing. Mix all ingredients together and let chill for a little bit if you can. If not still good just mixed. I serve on a kaiser roll with a tomato slice or pickle slices and chips or cheesy tortillas on the side. Great lunch.

Halloweeen is over...

Thankfully. We didn't do anything because it was rainy and we were just flat out tired. So, we did relax for the most part. But, now with the cold weather approaching that means crock-potting should really kick into full gear. Especially before the new baby arrives so I can cook without too much stress. Throw it in the pot and let it do it's thing! So, stay tuned. I will run the gamut of some of our past favorites. Most are meat recipes because I hadn't really gone towards vegetarian leanings yet, but as I concoct something that is tasty I will be sure to post that recipe as well for any who might appreciate it. Here's the first: Not making today so I don't have a picture, but my very picky in-laws who think my cooking is generally weird (even though you'd pay out the nose at a restaurant for it) like this...

Crock pot roast beef (6qt)

2.5 lbs bottom round roast
4 potatoes peeled and cubed
1 large onion diced
3 large carrots peeled and julienned
1 can of golden mushroom soup (if you have home made, even better!)
1/2 cup of water
1 tsp each of the following: garlic powder, paprika, parsley
1/4 tsp rosemary
1/2 tsp each of salt and fresh cracked pepper
Variations tried: add 10 oz. sliced mushrooms (love)
can also just use 1 cup beef broth in crock in lieu of mushroom soup and the water, but it will be more juice than gravy. Still good to sop up with bread though.


Place beef in pot fat side up! Add rest of ingredients and put on low for at least 8 hours. 10 is better to be honest. When it's ready pull beef out carefully and pull off fat layer. Put back in pot and shred the meat which is what it will want to do anyway. Serve with warm crusty bread and small side salad. Great on rainy, chilly nights!

2 years and going strong

I wanted to post because we have now been nursing for over two years and the relationship is still going strong. The nursing definitely helped over the summer with the final four molars trying to come in all at once or at least very close together. It helped with pain and some tantrums as a result of frustration from that pain. I have a feeling that we will be tandem nursing which is fine with me as long as both children are fine and getting what they need out of it. My only complaint with nursing has been the tot's love of pinching while nursing. No distraction or comfort object has worked to cure pinchy fingers. But all in all it's going well and for that I'm incredibly happy.

Cream of Potato Soup



I have had the worst craving for this so I broke down and threw some stuff together. It turned out awesome!

5 medium/large white potatoes peeled and diced
5 large cloves of garlic minced
1 medium onion diced fine
1 pint of HEAVY cream
1 cup of reserved potato water plus any additional possibly needed (you'll need to judge)
2 chicken boullion cubes
3/4 tsp thyme
1/2 tsp black pepper
1/4 tsp oregano
1/2 tsp salt
1/4 tsp garlic powder
2 heaping tablespoons (probably a total of 4 measured) flour
3TBSP butter
2TBSP butter
2 stalks celery diced fine

Peel and dice potatoes and boil until almost fork tender (once water came to a boil about 8 minutes for me).

In another pan place onion, celery and 3TBSP of butter. Place on low and sweat the veggies until just soft. Add garlic and mix together. Add flour and mix in very well. (I had to add probably 1/4 cup of potato water to help get the consistency a little less like one huge clump.)

In the actual reserved cup of water (I had to add to it because I used some for above) dissolve two chicken boullion cubes.

Drain potatoes. Place in the same pot (I'm a big proponent of saving myself from doing dishes) the broth and potatoes, then the roux like mixture, 2 TBSP of butter, seasoning and the pint of heavy cream. Mix it all together and heat until the mixture starts to boil. When it boils turn it down to low so that it justs barely simmers. Cook for about 30 minutes.

It will probably need more salt and pepper to suit your personal tastes in your bowl. I garnished mine with chopped green onion and sharp cheddar cheese. On my second bowl I added just a tiny bit more butter and mixed it in. Divine! And it was nice and thick just the way I wanted it. And yes, I will be figuring out how I can make this in my crock pot to have on hand during the winter. I would say this will comfortably feed 4 people. I had a big salad with mine so that's why I'm guessing 4 servings. Maybe a nice fruit salad on the side as well?

I finally got my shop stocked a little bit. I did not get to finish all of the inserts because of chasing after my cranky toddler this week. But, I'm hoping to finish up this weekend since I should have a little child care relief for a bit. Plus, I really need to get working on our Christmas gifts. So, that's next on my list! :-)

Grilled French Toast















I have not felt like cooking but I have had the worst craving ever for french toast. Because I didn't feel like cooking on the stove I used my Foreman Grill.

4 thick slices of Challah bread at least an inch thick
2 eggs
1/4 cup milk
Cinnamon and sugar to taste

Mix the eggs, milk, cinnamon and sugar together. Dip Challah in. Put in Foreman grill for 2 minutes and then flip so you also get nice grill marks. Cook for 2 more minutes and serve. I topped ours with butter, more cinnamon and sugar and syrup. My almost two year old ate two slice and I had two slices as well. Delicious! And easy cleanup to boot.

Dinner and sewing

Not at the same time!

So I threw dinner in the crockpot today because I still can't deal with cooking for the most part, nor meat. It needs tweaking, but could be a good side dish for anyone having roast beef or chicken. In my 2 qt. crock I put:

3 sliced large red potatoes
1 small onion diced fine
1 bunch of green onions sliced, inlcuding the white part
8 oz. mushrooms sliced
1/4 tsp fresh cracked pepper
1/2 tsp garlic salt
1/8 tsp paprika
1 can of golden mushroom soup
7 oz shredded cheddar cheese

I layered everything in the crockpot and wound up with 3 layers. The cheese didn't melt in between two layers because I got paranoid and added a half cup or so of water. It didn't need it at all. I have a bit of soupy concoction, but still tasty. Next time, I'll leave out the water and figure out something different with the cheese, but still use that much because it is good. This would probably be 4 generous side portions. And next time I might try it with some cheddar cheese soup.


Onto the sewing...well serging. It took me an hour and half of trial and error tonight to get things right. But I finally started working on my hemp inserts for my diaper stash. I have enough fabric left over that I can make about 30 additional inserts which I plan on selling on etsy. 6 will be for super soakers overnight and the rest will be for regular daytime use. So, we'll see if they sell. I hope they do because obviously that would be a sense of accomplishment after all the hard work going into them. But, I am really excited to get the ones for my diaper stash done, plus I am making diapers for my newest arrival so it'll be neat to see everything together for those diapers. And I only have a couple more months before I can see the fluffiness on a newborn bum! :-)

It's a little bit of everything

Pregnancy and chasing after a high need and demanding toddler has been kicking me in the behind. I finished a request for etsy that I'm really excited about although I think it took me a month to finish between morning sickness, braxton hicks and the toddler that loves sewing machines/sergers and has to be right in the thick of action. I got a new serger, well new to me anyway, so I am working out the kinks of getting to know it and get better. And I am getting better each time I sit down.

On the personal side of sewing I'm working on what to do for Christmas since this year will have to be largely handmade because my husband probably won't have a job and we need to save money for hospital bills. I'm also working on making some reusable snack/sandwich bags to have around. And I'm going to be working on some maternity shirts since I can't find anything that fits properly, as well as some nursing tops/tanks especially for night time. Cold weather nursing with exposed skin does not make for a happy mama.

And tomorrow my friend and I are going to hang out and I'm throwing this in the crockpot in the morning to be ready when she comes over....

Chicken breasts
Golden mushroom soup
portobello mushrooms
onions
carrots
rice
and maybe some button mushrooms because I feel like mushrooms
cook on low for 6-8 hours. (add water to help the rice, and the rest should be gravy)
We'll see how it turns out. Could be great, could be terrible.

Cleaning Recipes Part 2

My child is asleep so I can finsh up my post.


Tile Cleaner
2 tbsp. distilled white vinegar
3 cups water
10 drops of essential oil
Mix these together in a spray bottle and spray on your tile and wipe off.
SL: Use what you need discard the rest

Scrub solution
1/4 cup baking soda
Castile Soap
5-10 drops essential oil
Mix ingredients to a paste like consistency and use a rag to apply and wipe off. Rinse off well with water.
SL: Use what you need and discard the rest

Window cleaner
2 Tbsp distilled white vinegar
4 cups (1qt) warm water
Mix together in spray bottle. Spray on windows and use a natural fiber cloth to wipe clean. I use a squeegee as well and it works fine for me. This stuff is tried and true. People can’t really go wrong with this.
SL: Indefinite

Cleaning Recipes Part 1

I've been meaning to do this for a long time, so I'm posting some of my favorite recipes for DIY household products and cleaners. With these I cannot stress enough, please label your containers! I use glass to store my powders. Generally recycled fruit and pasta sauce jars and sometimes if I'm desperate pickle jars. But, please label, label, label!

All purpose cleaner 1
2 Tbsp Borax
1 qt. Hot water
Mix well together and pour into spray bottle. It will need to be shaken together as it separates if not used all in one day of cleaning.
Shelf Life (SL): Indefinite

All Purpose Cleaner 2
1 tsp Super Washing Soda
2 tsp Borax
½ cup Castile Soap (I really like Dr. Bronners)
10-15 drops of whatever essential oil you like
Mix all of these ingredients in a 16 oz spray bottle or double and put in a qt. bottle.
SL: Indefinite

Carpet deodorizer
2 cups of baking soda
20-30 drops of essential oil
Blend together very well and pour into a shaker bottle. I use the cheap glass ones at my local big box store (even the parmesan glass containers would work but won’t hold two cups of baking soda so adjust accordingly). Shake onto carpet and sweep in with a broom or brush. Let sit for a half hour or for heavy odors overnight. Vaccuum up.
SL: Indefinite

Dishwasher soap
1 cup Borax
1 cup Baking soda
Mix together and pour into a glass container for storage.
SL: Indefinite

Air Freshener
1 cup warm water
5-10 drops of favorite essential oil or blend
Mix together in a small spray bottle and use as needed.
SL: Indefinite

My laundry soap recipe

Ok, I've jumped on the bandwagon and have now made my own laundry powder. I have to be honest it wasn't too much work and I really like it. It works just as well as any powder I'd buy in the store.

Ingredients:

Borax 2.99
Super Washing Soda 2.99
Fels Naptha Bar 1.29
Baking Soda .99
Oxyclean 7.69 (after coupon and sale from Target)
Essential Oils (nominal because I already had them and use them for other applications)

In a large recycled pickle jar, like the one you buy at Wal-mart that has the whole pickles in them Vlassic brand and probably had 25-40 pickles in it. So the really big one. It was a couple years old and hadn't been used in a while so it didn't have the after smell anymore that sometimes sticks around. Anyway, in this large jar I poured 1 1/2 cups baking soda, 3 cups of Borax and Super Washing Soda each, and about 5 cups of Oxyclean. Close up the jar and shake really well to mix together. Then I used a cheap metal grater specifically for cleaning products and grated up the Fels Naptha bar. It took me about 45 minutes to grate because my hands got tired and I made the mistake of not watching once and grated my knuckles...Ouch. Once this was grated I added the bar to the previous mixture. I shook this up really well until I could see the yellow of the Fels Naptha bar throughout the container.

I then took about 3/4 cup of the mixture and poured it into another non food use cup and blended in about 20 drops each of peppermint and sweet orange essential oils. When they were blended really well I poured this into another recycled jar (I used a Orchard Select fruit jar that you get in the refrigerated case of the produce section since my child loves the fruit from them) and then added another 3/4 cup roughly of the unblended (in terms of EO's) to the blended mixture and shook very well to incorporate the two together and gave it a stir for good measure. When ready to do laundry I put 2 Tbsp in a measuring cup and quickly dissolved with warm water and poured it into the laundry tub for use. It works great. I got probably 15 or 20 loads out of this mixture. I'm not sure since our summer student used some as well while she was here and loved it too. But, I still have the big jar to use and can change up the essential oils as it pleases me since I take some out and do smaller batches to have the scent that I want. I will say that you don't have to use any fragrance. The Fels Naptha seems to have it's own scent which is pleasant enough especially when mixed with the rest of the ingredients, but I like being able to do what I want. And that big jar I will guestimate has over a 100 loads in it. Plus, this is my second batch of making my own soap. So, the $15.95 I spent to get probably close to 200 loads of laundry soap which equates to roughly $0.07975 per load is better than anything I can get in the store. However, for those that might be wondering, do not use this on your cloth diapers as I don't recommend it or consider it safe for them.

Shelf life without essential oils: Indefinite
Shelf life with essential oils: 3-6 months. Scent will slowly fade.

Ok, it's been a while

I'm pregnant and trying to make it through the first trimester exhaustion and morning sickness and crazy hormones. I finally listed in my etsy shop though which is an accomplishment in itself! I plan on listing more soon since I want to use the funds to buy some material to make myself a couple things like maternity shirts and I'd like to put it towards a Serger Fund since my current serger does not like to play fair or cooperate and it's been diagnosed several times in the past few months. I figure I can't sell anything without being seconds until I start that fund. So, here's hoping. I've at least picked cute fabrics that would be gender neutral or boyish which is my aim. And I have to say because I've been so sick I haven't been so eco-friendly with cleaning, more specifically the bathroom. I've been using Lysol toilet cleaner because I can't seem to keep the mildew away with tea tree oil. And since I'm visiting the porcelain gods so frequently I want to see a sparkling bowl without said mildew. Anyway, I will try to post again later.

Easter brought us...



I gave my son a sand bucket full of goodies for Easter. Some were store bought, but I also made him a couple things which I loved. I made him a shirt, shorts and a contoured diaper which was a first all around and I think it turned out well for the first attempt.

I personally love the fabric. I got it at Joann Fabrics in their red tag bin for $4/yd. Since, I don't have the budget right now to spend on the other fabric that I want I shop that section and am able to find some things to store away and hold onto. Lately they have a lot of camo print which is great because we like it since we're a military family (and we have family members that have been in and close friends that are.) Dh and the baby helped pick out the fabric since I said that it was going to a project for the baby. I think it turned out well and am really happy with it. :-)

It was his first Easter of being aware of what was going on and being able to take part in things which was so much fun. There are still a couple of eggs that he has to "find". I think that he will in the next couple days, he's just so happy with the things that we got him. We got him a couple kitchen play toys since that seems to be one of his favorite rooms in the house. Plus, I love that he's not pulling out the pots and pans constantly and making others unhappy with that since it's requested that they be washed every time they are played with by him. Anyway, it's time to find a few more snacks for the darling before bed time and his last long nursing session of the evening.

Still going....

My child has been breastfeeding now for 16 months without an end in sight. The past couple days have been going closer to the side of exclusivity because of some schedule issues this week. I'm not complaining, but I wrenched my shoulder from poor nursing posture in bed and now it hurts to nurse at night laying on my right side. The nice thing is that DC has been trying some solids the past few weeks which is nice. There is a definite love of carbs and garlic. Definitely my child. We're still working on getting some veggies in there, that's just going to take patience. I'd love for DC to also start taking to beans too for some protein, but I have to plug in the crock pot for that soon. Which reminds me.... I need to go recipe hunting. Happy nursing to all! :-)
